Super Green Smoothie Bowl with Tropical Kale Granola Bites

These SUPER GREEN smoothie bowls are packed with greens, fruit and customizable toppings! This has to be the fastest, healthiest and easiest way to get fruit, veg and plant protein in your belly! 

 

 

 
Makes 2 Bowls

 
Here's What You Need (Smoothie Bowl):
  • 1/4 cup Tropical Kale Superfood Granola
  • 2 Frozen Bananas
  • 2 Big Handfuls of Greens (kale, spinach, chard, etc)
  • 2 Dates, Pitted
  • 1 cup Frozen Mango Chunks
  • 1 cup Pineapple Chunks
  • 1 cup Plant Milk (soy, oat, almond, etc)

 

Optional Add-Ins (recommended but not necessary)
  • 2 Brazil Nuts
  • 1 tsp Spirulina 
  • 1 scoop Vegan Vanilla Protein Powder 

 

Pop all of the ingredients in a high-speed blender and blend until thick and smooth!
 
Pour your smoothie into your favourite coconut bowl or make your own fruit boat (see Pro Tip)! Top with Tropical Kale Superfood Granola Bites (see recipe below) and Pineapple!
 
 
Tropical Kale Superfood Granola Bites
 
Makes 15-20 Granola Bites

 
Here's What You Need (Granola Bites):
  • 1 cup Tropical Kale Superfood Granola
  • 4-5 Dates, pitted

 

Here's How to Make Them:
Add 1 cup of Tropical Kale Superfood Granola to a food processor and blitz for 45-60 seconds, then add in 4-5 dates (make sure they are pitted) and blitz for another 45-60 seconds. Once the mixture is sticky enough to pinch together (that is what you want), take it out of the food processor and roll the "dough" into balls. 

PRO TIPS :
How to make a Pineapple Fruit Boat: Stand pineapple upright; vertically cut about a third from 1 side, leaving the top attached. Remove fruit and discard outer peel from the smaller section. Remove fruit from the large section, leaving a 1/2-in. shell and fill with your smoothie!

 

 

Granola Bites: These freeze really well, so they are the perfect make-ahead-of-time treats. Keep in a sealed container in the fridge for up to 10 days or freeze for up to 3 months. Okay at room temperature for a few days if kept cool and dry.
 
Dates: It’s important to use soft, moist dates. If your dates are dry, soak them in hot water for 10-15 minutes then drain well before adding them to the food processor.
